As Christmas season is fast approaching we will bring to you delicious recipes that are easy and quick to prepare. So chefs here goes: Have fun with your ovens.
Peppers stuffed with Smoked Aubergine
2-3 small aubergines 3 table spoons olive oil
4 cloves of garlic, crushed
12 onion, chopped
2 oz (50 g) fresh root ginger, grated
1 tablespoon each mustard seeds, cumin seeds and asafetida
Juice and zest of 1 lemon
Sea salt and freshly ground black pepper
4-6 medium green peppers
¼ pint (150 ml) dry white wine
¼ pint (150 ml) vegetable stock
First smoke the aubergines. Prick them with a fork and grill them charring the skin. Turn them over on all sides so that the outside blisters and blackens and the inside become soft.
Leave to cool and scrape away the blackened skin. Extract all the pulp and chop it roughly.
Heat the olive oil in a pan and add the garlic, onion, and chilli, ginger and mustard seeds, cumin and asafetida. Cook for a few moments until the onion softens, then the aubergine pulp. Stir thoroughly and cook for a farther few minutes before adding the lemon juice and the seasoning.
Prepare the peppers by slicing the tops off and scooping out the core and seeds.
Choose and oven dish with a lid which will neatly hold all the peppers and keep them upright. Pour in the white wine stock. Fill each pepper with the filling. Place its lid on and fit into the oven dish. Bake in a preheated oven, 275ºF/190ºC/gas 5, for 30-40 minutes.
Serve at once./TE
